Eid special mutton biryani recipe!
Let’s begin this post by wishing you all a peaceful and joyous Eid-Ul-Adha! And today I will be talking about a famous dish for the occasion. Yup, no points for guessing, it's Biryani! So let’s get started.
The atmosphere & excitement of the festivals are reminiscent of our childhood memories & how we used to eagerly wait for these festivals that were our chances to get dressed in new clothes, take the blessings of our elders, enjoy the perks of getting EIDHI from our elders as an Eid Gift and moreover, the delicacy such as a mouth-watering & heart filling yummy Mutton Biryani!
But did you know? The story of Biryani is more than just yours and our childhood, it is a story that is worth knowing.
So basically, as per the belief, Biryani has been imported all the way from Persia to India. Later the Mughals developed it in their own kitchens. Thanks to the Mughals who introduced us with such a yummy delicacy. The word Biryani is also derived from the Persian word Birian, which means “Fried Before Cooking” & the word Birinj is the Persian word for Rice.
It is obvious that with such a Royal dish, there have to be some legends involved. The most famous tale which is involved with Biryani is the one with Mumtaz Mahal, Shah Jahan’s beautiful queen who inspired the beauty of Taj mahal.
It is said that once Mumtaz paid a visit at the Army Barracks of Mughal Soldiers & found them to be weak and undernourished. Worried by the fact she asked the chef to prepare a special dish that combined meat & rice to provide them the balanced nutrition & yummy taste which they and their efforts deserved.
During that era, the Biryani used to be cooked in a little different way, Rice used to be fried in ghee without washing to give it a nutty flavor & prevent it from clumping. Mint, aromatic spices, and saffron were used to be added in before cooking the mix over a wood fire.
Later when the Mughals took over every state in our country, they started to spread the food culture of Biryani in the style of their own state such as Bangalorean Biryani, Hyderabadi Biryani, Lucknow Biryani, Kolkata Biryani, Bombay Biryani, Thalassery Biryani, and many others!
But the most popular & celebrated type of Biryani all over the world is Mughal Biryani. If you don’t believe it, we would suggest preparing it & try it yourself!
As the Mughar Emperors were fond of lavish dining experiences, they used to make sure that their Biryani is made with perfectly spiced meat chunks with scented rice that releases an irresistible aroma and makes the dish drool-worthy! So take down the ingredients first.
Ingredients:-
- Almonds - 1 cup
- Rice - 500 gms
- Mutton - 750 gms
- Onions - 3 to 4
- Spices such as - Cinnamon, Cardamom, Cloves, Peppercorns, Cumin & Garam Masala
- Ginger & Garlic
- Yogurt
- Lemon
- Coriander & Mint leaves
- Salt to taste
- Saffron
- Oil
- Ghee
- Kneaded flour to make the cover ( Purdah )
- Red chili powder
- Yellow chili powder
- Green Chillies
- Tomatoes
Preparation:-
- Boil the rice until half-cooked.
- Wash the mutton pieces well and marinate with ginger-garlic, red chilies, turmeric, coriander powder, garam masala, black pepper, jeera powder, salt to taste, 2 to 3 spoons of raw papaya juice for an hour
- Prepare the beresta by thinly slicing the onions and frying in the oil till brown. Cool and set aside.
Cooking Method:-
- In the same oil, add 2 spoons of ginger garlic paste with 5 to 6 green chilies & tomatoes. Cook till the tomatoes get mushy.
- Now add mutton inside the vessel & let it simmer for 10 minutes along with the fried onions which were kept aside earlier.
- Once the mutton has become a little pink & tender, add 1 cup yogurt.
- Add Biryani masala powder & mix them all well for 2 minutes.
- Now add half cooked rice & mix it again.
- Mix half cup milk with a few strands of saffron & some rice for decoration.
- Then roll the kneaded flour (purdah) & cover it over the vessel as a lid to make it airtight.
- Keep it on a slow flame for at least half & hour
Once you see the steam escaping, remove the “purdah” carefully and mix the rice with light hands using forks.
Serve the flavorful biryani with raita on the side.
